Paneer Kolhapuri is a spicy dish from Maharashtra. To make it, prepare Kolhapuri masala by roasting dry coconut, sesame seeds, poppy seeds, cumin, coriander seeds, and dry red chilies. Grind them into a powder. Sauté onions, ginger, garlic, and tomatoes in oil, then add the masala and cook until fragrant. Add turmeric, red chili powder, and salt. Mix in paneer cubes and simmer with water until the gravy thickens. Garnish with coriander leaves and serve hot with roti or rice.
